Basil Pesto Recipe

Our most popular herb is basil, and one of our favorite uses of basil is making pesto.
Ingredients:

3 garlic cloves 1 tsp. salt
1/2 cup pine nuts 3 cups packed fresh basil
2/3 cup Parmesan cheese    2/3 cup olive oil
1/2 tsp. pepper

Steps:
1. With a food processor running, drop in garlic and finely chop.
2. Stop motor, add nuts, cheese, salt, pepper, and basil.
3. Process until finely chopped, then add olive oil and blend until incorporated.

Makes approximately 1 1/2 cups

To serve:
Put 2/3 cup pesto in a large bowl and whisk about 1/3 cup pasta water to thin the pesto. Add drained, hot cooked pasta (about 1 pound) to thinned pesto. Toss and add additional cheese. Makes 3 to 4 servings. You can freeze leftover pesto.
